I saw these too cute Rainbow cupcakes in the March issue of Family Fun magazine. This is the one of the best magazines in print. Some of the stuff in it now is too young for my kids, a lot of preschool crafty type stuff – but there is still a lot it offers for older kids too. I wanted to make these cupcakes Easter weekend, but we never got around to it. Then when I had the bright idea for my Color Me Happy Summer party, I knew they would be perfect for it!
They turned out to be a bit more work than I thought they would be. I guess I should have went ahead and made them the day before the party, but I didn’t. Luckily, I had Lael to help me. She is really a big help when we are baking something. She is very precise about measuring ingredients, and keeps me on track of where I am in the recipe. She also never gets tired of stirring. We had to divide the cake batter into 6 different bowls, then tint each bowl a different color of the rainbow. That was fairly easy and quick. What took forever was layering the different colored batters in the cupcake liners. Finally we got them in the oven and baked. Then the fun part – icing them and adding the sprinkles. They turned out perfect!
